White Pepper

Piper nigrum

White pepper is a spice derived from the same plant as black pepper, known as Piper nigrum. It is made from the ripened berries of the plant, which are soaked in water and then the outer skin is removed, leaving behind the inner seed. The seed is then dried, resulting in white pepper.

The key difference between white pepper and black pepper lies in the processing method. While black pepper is harvested when the berries are not fully ripe and then dried, white pepper is made from fully ripe berries with the outer layer removed, giving it a milder and slightly different flavor profile.

White pepper has a lighter color and a more delicate taste compared to black pepper. It has a slightly earthy, spicy, and less pungent flavor. White pepper is often preferred in dishes where a milder pepper taste is desired, as it provides subtle heat without the stronger flavor notes associated with black pepper.

In addition to its culinary uses, white pepper is believed to offer potential health benefits. Like black pepper, it contains a compound called piperine, which may have antioxidant, anti-inflammatory, and digestive properties.

White pepper is available in whole peppercorns, ground powder, and even as a seasoning blend.
